We incorporated less fat & sugar as compared to a typical oatmeal and raisin cookie recipe, whilst retaining great taste and texture. Each cookie is only 130kcal!

Ingredients♡
↠ 300g oats
↠ 100g raisins
↠ 140g whole wheat flour (Yay!)
↠ 150ml veggie oil (instead of butter)
↠ 100g light brown sugar
↠ 1 large egg
↠ 1 tsp cinnamon
↠ 1 tsp vanilla extract
↠ ¼ tsp bicarbonate of soda
↠ a pinch of salt
· Preheat oven to 180°C · Soak raisins in 50ml boiling water for 20mins · Drain and keep the water · Mix oil & sugar, then add in the egg, water (from raisins) cinnamon & vanilla · Add sifted flour, bicarbonate of soda & salt · Mix in the oats · Drop tbsp of cookie dough onto baking tray & bake for 12-15mins until golden · Let it cool for 10mins and enjoy!
